A SPIN ON PALAK PANEER - Indian style spinach and cheese goodness.

This recipe is a keeper.. a little bit creamy, a little bit spicy. Green goodness complemented by earthy chickpeas and a cheese hit that doesn’t leave me feeling heavy or mucousy like dairy sometimes can. Freezes like a dream. Gets better after a few days in the fridge. Protein. Complex carbs. Greens. Simple. Delicious. Covers all my bases. All ingredients available at the supermarket.

GATHER -

One medium onion - finely chopped

6 garlic cloves - finely chopped

2 tbl grated ginger

Can crushed tomatoes and a can of chickpeas

A packet of frozen spinach portions (I think the organic one from Woolies is 450g)

A small bottle of cream

A packet of paneer (from the cheese section of the fridge - near the dips. If you can’t find it, use haloumi or firm tofu). Cut into small cubes.

2 tbl olive oil or ghee

SPICES -

4tsp ground cumin

2-3 tsp garam masala

2 tbl chilli flakes - only if you want. I want.

Salt to taste - 2ish tsp

METHOD -

Defrost spinach in a fine colander over a bowl to collect to spinach juice. Save this.. #Gold.

Heat a frying pan to medium. Add cumin and stir until smells awesome. Put aside into little bowl to add back later.

Add oil or ghee and cook onions gently until soft, then add ginger and garlic. Stir and cook gently for about 2 MINS.

Add tomatoes and drained chickpeas and stir. Lower heat and put a lid on to blub away for about 10 MINS.

Add spinach, cumin and chilli flakes. Simmer gently for 5 MINS, lid off.

Add ½ CUP cream and simmer for another 3-5 mins, until it thickens slightly. Add in some of the spinach water if too thick. Add paneer and stir gently.

Add garam masala and salt to taste.

Serve with rice (red, brown or black are my preferred options.)
