ZUCCHINI SCONES

250g SR flour IN A BOWL

GRATE IN 70g cold butter

Add a tbl of salt, a tsp of garlic powder, a tsp of veg stock powder (I use Massel) and, for extra yum a generous tsp of smoked paprika..a spice that you MUST have in your pantry!

Mix this together and add 2 beaten eggs and 100g grated cheese (this is a good opportunity to use up all those little bits in packets and from last night’s cheese board. Seriously, ANY cheese will do, but in my world, NOTHING beats a stinky, local blue like Prom Country Venus Blue (drooling). Give it a good whack of pepper (and salt if not using parmesan or strong cheese like the aforementioned PCVB).

Next add about ½ cup of milk

MIX AGAIN - it will be lumpy, but stick together. DO NOT FREAK OUT! WE LIKE LUMPY.

DUMP lumpy ball onto a tray lined with baking paper and form into a circle about an inch thick. Use your maths skills to roughly score the circle in 8 equal wedges. DON’T CUT IT, JUST SCORE THE TOP.

Bake in 200deg oven until golden and cooked in the centre, about 40 mins.

Eat hot with a shitload of butter.
